Clawson Blue Shropshire ~ Various Weights
Clawson Blue Shropshire is a full-body cheese with a creamy texture, rich flavour and distinctive blue veins.
Traditionally made and lovingly matured, this mature and mellow cheese is the pride of Clawson’s Master Cheese-makers.
The perfect Blue Shropshire will be a rich orange in colour with distinctive blue veining and a golden crust. It pairs best with a good English brown Ale. Also, as with Stilton, it tastes great with a rich fortified wine or a fine Port Wine.
Wedges vary in weight and pricing is based on a quarter pound.

Blue Shropshire with Pasta, Bacon, Spinach and Pinenuts
A delicious variation on pasta Carbonara, combining mellow Shropshire Blue with smoky bacon, fresh spinach and sweet toasted pine-nuts. A lovely week-night staple.
Ingredients: (1) 350g fusilli pasta (raw weight) (2) 50g baby leaf spinach (3) 200g smoked streaky bacon, chopped (4) 50g pine nuts – lightly toasted (5) 100ml crème fraiche (6) 200g Blue Shropshire cheese, crumbled (7) Coarse ground black pepper.
Method: (1) Add pasta to a pan of boiling water and simmer for 10-15 minutes until the pasta is soft in texture. (2) Meanwhile chop the bacon and gently fry. (3) Place pasta after cooking into a bowl and add crème fraiche, carefully mix ensuring that the pasta does not breakdown too much. (4) Add in the toasted pine nuts, bacon and baby spinach leaves. (5) Season with coarse ground black pepper to taste. (6) Top the pasta dish with crumbled Blue Shropshire. Serve immediately.
