Recipe Idea: Lamb Kebabs with Baxter’s Mint Sauce ~ Serves 4
What you’ll need to make it: 500g lamb trimmed and cut into 2.5cm, 2 yellow peppers (for skewers), 2 red onions (for skewers), 250ml olive oil, 1 red onion, 1 clove of garlic. 2 sprigs of mint, 1/2 jar Baxter’s Mint Sauce and 8 skewers.
Method: (1) Slice the onion, crush the garlic and bruise the mint and add to a bowl. (2) Add the oil and lamb pieces and leave to marinate overnight (if you don’t have time, marinate for 2 hours). (3) Using the skewers, spike each piece of meat alternately with red onion and peppers. Grill or BBQ for around 5 minutes, turning regularly, to give you nicely charred meat on the outside with juicy pink on the inside.
(4) Allow to rest for a few minutes and serve with Baxters Mint Sauce.
